I've been rather lucky to try a few different Pinterest recipes lately that were really great. They have or will be made again in our house!

1 lb penne pasta
3 chicken breasts, shredded (I cook mine in the crockpot with Italian dressing as a marinade)
2 cups shredded cheese
3 TBS butter
3 TBS flour
2 cups chicken broth
1 cup sour cream
1 small can green chilies
Cook pasta and set aside. In a separate bowl, mix chicken and cheese together. In a medium sauce pan, melt butter. Stir in flour to make a roux and let bubble for 1 minute. Add in chicken broth and stir constantly, let bubble and thicken for 10-15 minutes. Turn off heat, add green chilies and sour cream, stir. In your baking dish*, layer pasta, chicken and cheese mixture twice. Pour sauce over top. Bake at 350 for 20-30 minutes.
*The original recipe calls for a 9x13, but I break it up into two 9x9 pans. One for us to eat then and one to freeze. It freezes and reheats perfectly!
Easter Bunny Bait
2 cups pretzel
1 bag popped white popcorn
1 package Almond Bark white melting chocolate
1 bag of festive M&Ms
2 cups of Chex cereal
Melt white chocolate according to directions. Throw all ingredients together and mix thoroughly, then spread out on a lined baking sheet. Pour melted chocolate over the mixture, then fold ingredients together with melted chocolate. Allow to harden and cool and serve!
I made this one for our Women's Ministry Craft Night and it was such a huge hit! The great thing is that it can be made year round by changing out the color of the M&M's, thought Cody and I both agree you don't necessarily need them because of the almond bark. While I will make this one again, it's dangerous... I could eat the whole thing!
