Saturday Night Fever

Guess what y'all?

I ACTUALLY COOKED DINNER LAST NIGHT!

I know. It's really not that big of an accomplishment. But considering that I haven't cooked dinner on a Saturday night in most likely years, it feels like something that should be celebrated! When I was a working gal, I cooked dinner Monday thru Thursday. Once the weekend started, the kitchen was closed and we ate out. Eating out that much doesn't really fly with the budget now that I'm staying home, so I'm trying to get creative with what I make.

We had a busy day on Saturday with lots of projects going on at the house, so I went with a relatively easy meal: brinner. I also wanted to make some pancakes to have on hand to try out with Griffin for breakfast. Now, when it's just food for Cody and I, I probably would go straight for the Bisquick. That won't cut it for the baby boy though, so I searched online for a whole wheat pancake recipe. I found several on Pinterest, but it was hard to tell if those would actually turn out decent, so this time I went with a recipe on Tasty Kitchen that had actually been reviewed several times.

Here's what you need for the pancakes:
¾ cups Milk 2 Tablespoons Vinegar 1 cup Whole Wheat Flour 2 Tablespoons Brown Sugar 1 teaspoon Cinnamon 1 teaspoon Baking Powder ½ teaspoons Baking Soda ½ teaspoons Salt 1 Egg 2 Tablespoons Butter, Melted 1 teaspoon Vanilla Cooking Spray, Butter Or Coconut Oil, To Cook The Pancakes

1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to “sour.” {I used lemon juice because I'm out of vinegar.} 2. In a separate mixing bowl, combine flour, brown sugar, cinnamon, baking powder, baking soda, and salt. Whisk egg, melted butter and vanilla into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. 3. Heat a large skillet or griddle over medium heat, and coat with cooking spray, butter or coconut oil. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

These pancakes are so good! I really wish I would have doubled the recipe to have more on hand to freeze. I plugged in the recipe to a calorie counter and it looks like they have about 80 calories per pancake. {I was about to get 10 pancakes out of it.} This will definitely be my go to pancake recipe from here on our!

I wanted a protein to go with the pancakes but didn't want to have to put any real effort into it. I found this recipe and edited it to work for us. Basically all I did was put two eggs, sausage, bacon and seasoning in a Fiesta dish and baked them for about 18 minutes at 375. This really ended up being a little too long, as they were almost like hard boiled eggs. Tasty at least, but next time I'll cook them less.

Slowly but surely, I'm going to get the hang of cooking on Saturday nights. You better believe we're eating out for Sunday lunch though! :)
