Jamaican Jerk Quesadillas

This isn't a new recipe, but it's one of our favorites and it's super easy, so I thought I would share it with you! This originated from a Jamaican Jerk Pork Chop recipe I have for the crock pot. We really love them, but every time I make it I find that we're more drawn to eating the veggies in it and using it for nacho toppings or quesadillas. I decided to just save the money and use it for a veggie meal. It's now a favorite in our household!

Start by sauteing bell peppers and onions in a pan, seasoned with garlic and jerk seasoning.

While these are sauteing, grab some corn and black beans. I used 1/2 a bag of frozen corn, which I microwaved for 3 minutes to unfreeze and 1 can of black beans, drained and rinsed.

After the bell pepper and onion are soft, add the beans and corn.

Then season liberally with more jerk seasoning.

While those are warming, lay a tortilla on a plate and top with cheese.

Then top with the veggie mix.

Then warm to melt cheese. We're nothing but fancy around this place, so I use the microwave.

Top with salsa and enjoy!
