I ventured out to try another new recipe as a part of my New Years Resolution. I have gotten super lucky so far, because all of the new recipes I've tried have been a hit! I was a little worried that Cody wouldn't like this one, but he loved it too!
Creamy Pesto Chicken & Bow Ties {courtesy of Campbell's Kitchen}
Ingredients:
2 tablespoons butter
4 skinless, boneless chicken breast halves (about 1 pound), cut into cubes
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1/2 cup pesto sauce
1/2 cup milk
3 cups bow tie pasta, cooked and drained
Instructions
1. Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring often.
2. Stir the soup, pesto sauce and milk in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes or until the chicken is cooked through. Stir in the pasta and cook until the mixture is hot and bubbling.
So those were the technical instructions given. I couldn't find bowtie pasta and used rotini instead. I cooked 2 boxes {13 oz each}, which was way too much. {after looking at the recipe again.. I thought it said 3 lbs of pasta.. 3 CUPS was much more manageable, ha! Live and learn!} I chopped up some onion and sauteed it with garlic for a bit before adding in the chicken pieces. I followed the instructions for the soup, but probably added about 1/3 C pesto instead of a 1/2. {warning: your breath will be kickin' with the garlic and pesto in this recipe!} I then scooped about 4 1/2 to 5 cups of rotini into the mixture until my pan was full. The sauce seems thin and I was worried we wouldn't taste it once I put it on our plates, but it was perfect. Serve with salad and bread!
