Simple Joys

Do you know what one of the best feelings in the world is?

Knowing that you have Monday off from work!

Seriously. Sunday night dinner is usually a little sad because you know that it's almost time to wrap things up and prepare to begin another week. Tonight though, we actually had time to cook a meal, AND I made dessert! I know. It's almost unbelievable for a Sunday night.

You've probably heard of this recipe before, but it's so simple and so good, I had to share it again. Plus, most people are probably renewing some goals to be healthier and this is definitely diet friendly.

Take 1 cake mix and 1 can of a diet drink. {tonight I used a spice cake and a ddp. chocolate cake and ddp cherry are great, along with funfetti and ddp. can you tell my diet drink of choice?}

Mix the two together and pour into a pan. Bake as directed. Top with Cool Whip and enjoy!

I chose to make them in cupcake tins. I could only find one of my tins {the other is currently holding frozen broth... kinda forgot it was out there!} so I also used some mini cake tins that are about 3 inches across. Each mini cake is only 170 calories or you can have 2 cupcakes for the same amount! Considering that two mini twixs are 160 calories, I would much rather have the cake!

  2. My mind is boggled! I had no idea you could make a guilty-free cake like that! I am going to have to try that out... it'll be a lot fewer calories than the mini brownie cookies I planned to make. ha!
