this recipe almost a year and a half ago, but after getting a lot of inquires for it from friends on facebook, I thought it was time to repost! This is such an easy recipe, but is super filling, is a great meatless Monday meal, and makes enough for a few meals of leftovers. {it's also good enough that you will look forward to the leftovers!}
{as a side note, I actually use more sweet potato than called for and added an extra can of veggie broth to help give it enough liquid. I think it would be good either way!}
The weather is now perfect for this meal. Serve with a side of cornbread and you've got a hit. Enjoy!
